
Cauliflower and Spinach Cheese
• 180g cauliflower
• 15g butter
• 15 ml (1 tbsp) plain flour
• 150ml of baby’s usual milk*
• 25g frozen chopped spinach, defrosted
• 30g cheddar cheese
*This can be expressed breast milk or your baby’s usual formula made up according to the instructions on pack.

Instructions
1. Wash the cauliflower and divide into small florets
2. Steam the cauliflower until tender, approximately 5-10 minutes
3. Meanwhile, make the cheese sauce. Heat the butter in a small non-stick pan, stir in the flour when the butter has melted.
4. Off the heat gradually whisk in the milk then, return the pan to the heat. Heat gently, whisking continuously until the sauce thickens.
5. Stir in the spinach and cheese and heat gently until cheese melts.
6. Add the cooked cauliflower and mash the mixture together or lightly blend in a food processor to make a chunky consistency.
Tip
Other combinations of vegetables your child might like include cauliflower and broccoli or courgette.
