
Chicken Fajitas
For the salsa:
• 1 tomato (approximately 65g)
• half a small avocado (approximately 75 g)
• 30g onion
• 40g sweetcorn
• squeeze of lemon juice
For the fajita:
• 1 small onion (approximately 60 g)
• 60g red pepper
• 100g chicken breast meat
• 15ml (1tbsp) rapeseed or olive oil
• 2 flour tortillas
• Frying pan

Instructions
1. To make the salsa, wash and finely chop the tomato, avocado and onion and mix together with the sweetcorn and a squeeze of lemon. Set aside to allow the flavours to develop.
2. For the fajitas, cut the onion, pepper and chicken into small strips.
3. Heat the oil in a frying pan, add onion, pepper and chicken and sauté until the chicken is cooked through, approximately 8-10 minutes.
4. Warm the tortilla. Divide the chicken fajita mix between the two and spoon over a little salsa. Roll up the flour tortilla.
5. Cut the tortilla in two and allow your child to pick it up and enjoy eating with their hands (hands washed first, of course!)
6. Serve any remaining salsa.
Tip
Tip: This is not suitable for freezing.
This is one of the most versatile chicken recipes for toddlers, as it can also be made with pork or beef, tofu or simply with more vegetables such as mushroom, shredded cabbage or spinach leaves.
Good to Know
Good to know: The salsa is made with raw ingredients and will provide plenty of Vitamin C, which is often lost during the cooking process.
Providing finger food for toddlers encourages them to feed themselves and explore their food at their own pace.
