
Mini Fish Couscous
• 20g fillet of cod or haddock, skinned and boned
• 90g courgette
• 50g uncooked couscous
• 10ml (2 tsp) rapeseed or olive oil
• 4 drops lemon juice
• 20ml (4 tsp) water
Utensils• Saucepan
• Handheld blender or food processor

Instructions
1. Heat 150ml of water. Cube the fish and finely dice the courgette. Add to the pan with the couscous. Cook for about 4 minutes over a low heat, until the water has been absorbed and the fish is cooked.
2. Add the oil, lemon juice and water. Blend together in a handheld blender or food processor.
3. Serve warm.
