
Ratatouille with Pasta
• 70g courgette
• 35g chunk of aubergine
• 35g chunk of red pepper, skinned and de-seeded
• 30g tomato
• 60ml (4tbsp) water
• 30ml (2tbsp) tomato ketchup or passata
• 30g small star-shaped or alphabet-type pasta
• 1tsp olive oil
• Saucepan
• Frying pan

Instructions
1. Wash, peel, and finely dice the vegetables.
2. In a small frying pan, fry the vegetables in the olive oil for about 5 minutes. Add the water and ketchup or passata, cover and cook for about another 10 minutes.
3. In a pan of water, cook the pasta according to the instructions on the packet. Do not add salt. Drain.
4. Mix together the cooked vegetables and pasta.
5. Serve warm.
Tip
This baby ratatouille recipe can also be served with cooked rice, couscous or bulgur wheat in place of pasta.
